Negi-yaki at "Yamamoto"
Childhood memory leads to success
"Okonomiyaki Yamamoto" was established in 1965 by Yamamoto Takae in Jusohommachi, Osaka. Eventually it became popular among the local people.
She had an image of "Issen Youshoku", a thinner version of Okonomiyaki, when she was making meals for her employees - pan-fried thin layers of flour batter topped with a large amount of Negi (scallions). Issen youshoku was a popular snack during her childhood days. After trial-and-error cooking, she finally succeeded in creating the basis of what is now called "Negi-yaki".
What's that you're eating?!
One day, a customer realized that the employees were eating something that looked really good, but wasn't on the menu. By request from her customers, she would specially make "Negi-yaki" for her customers which they loved. Three years later in 1968, after a couple of modifications, the long awaited Negi-yaki finally appeared on the menu.
A handful of scallions are spread all over a thin layer of flour batter. It is topped with powdered bonito, cabbage and beni-shoga (pickled-red ginger strips) and pan-fried, soft and moist; that's the "Yamamoto" style. They also have a wide variety of optional menus such as calamari, meat, prawn and gyu-suji (fibrous meat). In 1994 "Negi-yaki" was approved as a registered trademark. It has become popular nation-wide, so customers come from all over Japan. And 90% of them order Negi-yaki, of course.
